SUNSHINE SANDWICH - This is a fast, tasty breakfast. Just the thing to whip up on a busy morning.
2 slices of bread, toasted
1/4 cup grated cheddar cheese
1 1/2 tsp. Dijon mustard
salt and pepper
Break both eggs into a pre-heated frying pan, making sure they don't touch each other. Break the yolks, sprinkle with salt and pepper, and let them partially cook like this. Flip eggs, and sprinkle one of them with the cheese. Take the egg without cheese, and flip it onto the other egg, sandwiching the cheese between them. While the eggs finish cooking, and the cheese is therefore melting, spread some margerine and the Dijon mustard on the toast. Then sandwich the egg in the toast. Cut in half and enjoy!
