CHICKEN NUGGETS - Much better than from a fast food joint!!
2 whole breasts of chicken, skinless and boneless
1/2 cup flour, approx.
Oil for frying
Lemon pepper and salt
Heat oil, 1/2" deep, in large heavy skillet until hot enough for frying. Dice chicken meat into 1" cubes and coat with flour. Fry in oil until golden brown and cooked through. (Don't overcook, or meat will be tough and dry.) Drain on paper towels and season with lemon pepper and salt to taste. Good hot or cold. Serves 3 or 4 people.
