APRICOT CHICKEN - Sweet and savoury! A light dish that's just slightly exotic. 

3 boneless, skinless chicken breasts
2 Tbsp extra light olive oil (or other cooking oil)
1/4 cup onion, chopped
1 small red pepper (cored, seeded and diced)
1/4 tsp ground ginger
1/4 tsp ground cumin
398 mL (14 oz) can apricot halves
salt and pepper

In a non-stick skillet, heat oil over medium high heat, and add chicken. sprinkle with salt and pepper to taste, and cook until browned slightly (about 10 minutes).
Add onion, red pepper, ginger and cumin.
Drain apricots, but retain half the liquid. Add apricots to chicken mixture and continue cooking for another 10 minutes, adding a bit of the liquid at a time.

Delicious served with rice.
