COCONUT RICE - A staple of Thai food, and a great companion dish for all kinds of Asian food.
2 cups long grain rice
1 Tbsp butter or margerine
1 400 mL (13 - 14 oz.) can of coconut milk. (You can use reduced-fat coconut milk, if you prefer.)
1 cup water
1/4 tsp salt.
1) Melt butter or margarine in pan over medium high heat. Add rice and cook, stirring constantly, about 3 minutes.
2) Add coconut milk, water, and salt. Bring to a boil.
3) Reduce to simmer, and cook covered for 20 minutes. Remove from heat, let stand 5 minutes, and fluff rice.
Serves 4- 6.
