SAVOURY CORN FRITTERS - One of my favourite comfort foods!
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp lemon pepper
1/2 tsp salt
2 Tbsp margerine or shortening
1/2 cup milk
1/2 cups frozen corn niblets (thawed)
oil for frying
In a heavy sauce pan, or deep frying pan, heat oil on medium high heat. The oil should be at least 1 1/2 inches deep.
In a medium sized bowl, blend together the flour, baking powder, salt and pepper. Cut in the margerine or shortening with a pastry blender, or two knives. Add the milk and stir, then mix in the corn niblets.
Carefully drop by spoonfuls into the oil. Checking the undersides, turn when golden brown, and continue until colour is golden on both sides. Drain well and serve warm. These are even tasty cold.
